This rum from Plantation’s “Single Cask” series was distilled at Barbados’s West Indies Rum Distillery on both pot and column stills. It was aged for 4 years in bourbon casks at its home in Barbados, before being moved to France where it aged a further 5.5 years in Ferrand Cognac casks. For most Plantation rums, this would be the end of it, but with the single cask series, there is also a tertiary maturation, in this case for 6 months in Oloroso Sherry casks.

That sherry finish is certainly the star here, with a nose that shows walnut, pipe tobacco, coffee, plum and caramel, evolving towards vanilla, banana and coconut. The palate is both rich and dry, with an almost balsamic note, and deep notes of leather, cocoa, undergrowth and pepper, with some nutmeg and mango. The sherry cask comes through with an overt rum raisin, lending a subtle smokiness, heft, and generous mélange of holiday spice into the mix. The rum is bottled at 49.3% abv, with 113 esters g/hL AA. As always the value to quality ratio of the rum from Plantation skews impressively well, a remarkable rum, and ideal candidate for winter sipping.
